Method
- Cut hard boiled eggs in half lengthwise and put the yolks in a small mixing bowl.
- With a fork, mash the egg yolks until very finely crumbled.
- Stir in remaining ingredients, except the caviar, and mix together until very smooth and creamy.
- Arrange the eggs on a serving platter.
- Spoon yolk mixture into a pastry bag, fitted with an extra large star tip.
- Pipe the filling into the eggs. Be sure to use all the filling, you will want the eggs to completely filled,
- Garnish with a light sprinkle of paprika and a tiny spoonful of caviar in the center. Serve cold.
Notes
You might want to adjust the amounts of vinegar and sugar. Start with a 1/2 tablespoon of each and work from there until it tastes right.
